Herbes de Provence Chicken

Our Herbes de Provence is a mix of Basil, Marjoram, Rosemary, Sage, Summer Savory, Thyme and Lavender. All grown on our farm.

Preheat the oven at 400ºF

You will need for hardware:
Roasting pan

You will need for the dish:

Whole Chicken Approx. 2 Kg
Olive Oil ¼ cup
Herbes de Provence 2 Tbsp
Sea Salt 1 Tsp

In a bowl, mix together olive oil, Herbes de Provence and salt. Using your hand, coat the chicken entirely. Set aside and cool in the fridge for 4 to 6 hours. You could even let it marinate over night When ready to roast, preheat the oven to 400 ºF and roast the chicken for 20 min. This will give a nice golden brown color. Turn the oven down to 350 ºF and cook for another hour or until the juice comes out clear from the chicken when poked.

Serve with roasted potatoes and coleslaw.
