Honey Wagon Farms Recipes – Irene’s Carrot Pate

1 Tbsp olive oil
1 small onion finely chopped
3 carrots sliced (½ lb)
¼ cup water
¼ cup orange juice
salt, pepper, curry powder to taste
2 tbsp mayonnaise
1 tbsp coarse grained mustard
Cook onion in oil (covered pan).
Add next 6 ingredients. Cover and simmer 6-8 minutes. Uncover and cook until liquid has evaporated (5 min).
Cool slightly then process.
Add mayo and mustard. Cover and refrigerate several hours or overnight.
Uncover and cook until liquid has evaporated (5 min).
Cool slightly then process.
