Cherryvale Organic Farm Recipes – Zucchini bread

A proven family favourite, this recipe is decades old and is always a winner.
Ingredients:
• 3 eggs, beaten
• 2 cups white sugar
• 1 cup vegetable oil
• 2 teaspoons vanilla
• 2 cups grated zucchini
• 2 cups flour (whole wheat or white or a mix of both)
• 1 teaspoon baking soda
• _ teaspoon baking powder
• 1 teaspoon salt
• 2 teaspoons nutmeg
• 2 teaspoons cinnamon
Directions:
1. Combine eggs, sugar, and oil. Mix on medium speed.
2. Add vanilla and zucchini
3. Sift together dry ingredients and fold into zucchini mixture
4. Pour into two greased 9” loaf pans (or any baking pan that is around
this size if you don’t have loaf pans)
5. Bake at 350° for 1 hour.
