Cherryvale Organic Farm Recipes – Buckwheat Buttermilk Pancakes

1 1/2 cups buckwheat flour
1/2 cup all purpose flour
1 tsp baking soda
2 eggs, beaten
pinch of salt
2 tbsp of sugar
2 cups buttermilk.
Combine dry ingredients. Add wet ingredients and mix gently until combined.
Drop batter onto pre-heated griddle or frying pan. Cook until bubbles appear on top surface and flip. Cook a minute or two longer and then serve with maple syrup.
